Bright straw yellow. The nose offers hints of exotic fruit (primarily pineapple), golden delicious apple, light menthol, and hints of white rose and gardenia. Dynamic on the palate, with a delightful balance of freshness and savory flavors and alcohol content. The finish is almondy and fresh, reinforcing the finish.
Hand-picked into crates, the grapes are gently pressed as soon as they arrive at the winery. The free-run must thus obtained is cold-statically decanted for at least 24 hours. The must undergoes slow fermentation in stainless steel tanks at a strictly controlled temperature (12-14°C). Halfway through fermentation, 30% of the must is transferred to barriques, where it completes fermentation in approximately 20-25 days. The wine is aged in barriques for a further 6 months and the remaining 70% is reassembled; during maturation, a long series of batonnage procedures also follows, all with the aim of obtaining a complex, structured, and delicately perfumed wine.
